Getting my kindergartner to the bus stop by 6:45am has become pretty routine now, but I like to change up what she eats almost everyday. Some days she has cereal or oatmeal, other days she wants eggs, which are not that interesting. Here are two ways I have started serving eggs and toast:
Scrambled Eggs and Toast
Scramble your eggs and butter your toast like you usually do. Cookie Cutter the toast and fill in the shape with the scrambled eggs. Place cut out piece of toast on the side. Quick and very easy!!
Over Easy Eggs and Toast
Use any shape cookie cutter to cut a shape out of a piece of bread. Melt butter in a frying pan over medium heat. Place the bread in the pan and fry it lightly on one side (you can also fry the cutout shape). Flip the bread over. Reduce the heat to low. Carefully pour the egg into the cut-out hole in the middle of the bread. Cover the pan and cook for 2-3 minutes or until the egg has set in the bread. Flip the egg and bread and cook it on the other side. Voila! Serve it with the cut out piece on the side.
A little bit more time consuming, but worth it!!!
