The Sugar Fairy has done it again with this super cute snowman!!

Frosty the Adorable Snowman!!

Coconut Truffle
360g white eating chocolate, chopped coarsley
1/3 cup (80ml) cream
1/2 tsp coconut essence (or there abouts. Whatever suits your tastebuds)
1 cup (80g) desiccated coconut
saltanas (or dried cranberries)
orange sugarpaste (or pistachios)
mini m&m’s
1. Stir chocolate, cream and essence in small saucepan over low heat until smooth. Transfer mixture to small bowl; refrigerate about 2 hour.

2. Roll two level teaspoons of mixture into balls to make six small balls, roll three level teaspoons of mixture into balls to make six medium balls, roll level tablespoons of mixture into balls to make six large balls (you will have 18 truffles); place on tray. Refrigerate until truffles are firm.
3. Roll truffles in coconut; assemble six snowmen using three of the different-sized truffles for each, using toothpicks to secure them through the centre if needed. Decorate snowmen with cut up saltanas for eyes, sugarpaste/pistachio for nose and mini m&m’s for buttons. Use scraps of fabric, tinsel, pipecleaner or ribbon to make scarf.
Just Remembered: I stuck on the eyes, nose and buttons using glucose syrup.
