vegan recipe: brown rice breakfast

Breakfast is the most important meal of the day, or so I’m told.  When you think of breakfast, things such as eggs, pancakes, cereal, oatmeal, cream of wheat, grits, bacon…mmmmm, bacon…, generally come to mind.  Brown rice isn’t usually a breakfast item that comes to mind, but it is for me!!  I grew up eating rice, prepared like oatmeal, for breakfast.  Crazy, huh? I’m told it’s a northern thing, but people look at me like I’m insane, so I’m not sure where it originated from.  All I know, is that it’s delicious and I have been known to consume rice prepared this way for any meal of the day! It’s definitely on my list of comfort foods!!

brown rice breakfast

Simple and delicious.
Warms the heart and soul!!

INGREDIENTS:

  • brown rice (cooked or uncooked)
  • cinnamon
  • raisins
  • brown sugar
  • almond milk (soy or coconut)

I usually make extra rice whenever I cook, just for making this recipe the next morning.  However, it does have more flavor if you cook the rice in boiling water with cinnamon and raisins.

Just follow the directions on the package of rice.  Add a dash or two of cinnamon and a handful of raisins to the water.  Bring to a boil.  Add the rice.  Once rice is cooked, spoon out some rice into a bowl.  Add a teaspoon (or 2 tablespoons) of brown sugar and almond milk.
