vegan recipes: simple vegan meals

Vegan February is upon our family and we are trekking right along.  Of course with the craziness that is called life, I didn’t have time every night to spend hrs cooking, so I threw some simple meals together that worked out well for us. They’ve been repeated several times!!  Below are a few examples, but first, a vegan fun fact!!

Oreos, Nutter Butters, and Doritos Spicy Sweet Chili are vegan!!

Oh yes! Yes they are!!

veggie salad{Our favorite salad dressing is Brianna Poppy Seed, which we found out is vegan!!}


pear salad{I ate 3/4 of the salad before I remembered to take a pic!!}
{This dressing is Target brand and also vegan!!}



sweet potato{I didn’t have time to bake the potatoes, so, I just cut them up and boiled them until soft.}
{Hubby had a dash of cinnamon and brown sugar on his.  I enjoyed mine plain.}


Simple. Pretty. Healthy. Colorful. Vegan.
