Savory Dinner: L’Eggo my Quiche Eggo

It’s day 6 of Chief Waffle Officer week!  If you haven’t checked out the recipes showing up on the Eggo Facebook page, you should!!  I hope it inspires you to create your own fun creative recipe for The Great Waffle Off contest, where you could win $5,000!!!

My family LOVES bacon broccoli quiche for dinner.  It’s my hubby’s favorite meal, but he adds an obscene amount of hot sauce to his!!  I wondered, if molding Eggo Homestyle Minis would work as the crust for mini quiche, and wouldn’t you know it, they do!!  Not only are they delicious, but they make your home smell terrific whilst baking!!

Pair with salad and fruit, and you have a simple meal!!

These would be great for parties too!!

Mini Bacon Broccoli Quiche Eggo

  1. 3 four piece Eggo Homestyle Minis
  2. 1/4 c. broccoli {cooked}
  3. 1/4 c. bacon {cooked and crumbled}
  4. 2 eggs
  5. 1/4 c. milk
  6. shredded cheese
  7. dash onion powder
  8. dash garlic powder
  9. dash sea salt
  10. dash black pepper
  1. Pre-heat oven to 350°. Toast waffles per directions on the package. Once toasted, pull mini waffles apart and gently mold each waffle around a tart shaper, or a small bottle of sprinkles. Place shaped waffles into a mini cupcake pan. Pull florets off the broccoli and place in each waffle. Put several crumbles of bacon into each waffle. In a cup, mix eggs, milk, onion powder, garlic powder, salt, and pepper. Slowly pour egg mixture into each waffle, filling to the top. Place a pinch of shredded cheese on top of egg mixture. Put into heated oven and bake 15 min, or until eggs are fully cooked.
