fun kid dinner: porcupine taco

Tacos.  They are a staple in my home.  We try to have them once a week, which was custom when my hubby was growing up!!  I grew up with oven baked burritos, so, we merged the two and, thanks to Pinterest, started making baked tacos, which are now a favorite!!  Well, of course I had to make baked tacos into something fun, so I whipped up Porcupine Tacos!!  So adorable, simple, and don’t forget tasty!!

  1. tortilla
  2. cooking spray
  3. 1/4 c. taco meat mixture (warm)
  4. 1/4 c. refried beans/black beans (warm)
  5. shredded cheese
  6. shredded lettuce
  7. sour cream
  8. other taco toppings your family enjoys
  1. Pre-heat oven to 350°. Fold tortilla in half and using sharp, clean scissors, cut strips into the tortilla, keeping the folded end intact. Lightly spray cooking spray onto one side of the tortilla and place, spray side down, directly on the oven rack, draping over one or two of the bars. Cook for 5 minutes or until tortilla holds taco shape. Gently spread the beans, meat and cheese evenly inside the taco shell. Bake in oven until the cheese is melted. Pull out of oven and layer the rest of the taco toppings onto of the cheese. Add a dollop of sour cream on the end of the taco for the eye. Use a small piece of the taco meat for the pupil. Slice into an end of a refried bean/black bean and place onto the tortilla for the nose. Serve hot and enjoy!!!
