When my girls and I were visiting my parents this summer, my lovely mother whipped up these super delicious gluten free cookies. I have no idea where she came across the recipe, and neither does she, but man, oh man, are they incredible!! I’m gluten sensitive and try to keep it out of my everyday foods. I also have a lot of family and friends that are gluten free, so when I tasted these cookies and was flabbergasted by their simplicity and yumminess, I knew I had to share the gluten free love!! To be honest, I’ve tried a lot of different gluten free foodies and I haven’t found a packaged gluten free cookie that comes close to the goodness of these.
They are fantastic!!
I served them to friends and they all wanted the recipe, so, here it is…
- 2 1/2 c. peanut butter
- 1 1/2 c. brown sugar
- 2 eggs
- 2 tsp baking soda
- 1 tsp vanilla
- 2c. chocolate chips (melted)
- sugar (for coating)
- Preheat oven to 325°. Combine all ingredients (except sugar for coating). Mix well. Roll dough into small balls and then coat with sugar. Place balls onto cookie sheet. Bake 12-15 minutes. Let cool.
- They bake quickly. Check and make sure they are sufficiently cracked on top before pulling them out of the oven.
