We are immersed into the Holiday season and have made our share of pumpkin pie, which is my hubby’s favorite, and I have whipped up a couple of my favorite, apple crumb pie!  I’m not a huge fan of old fashioned apple pie, but I do love an apple crumb pie!! The brown sugar crumbs topping the warm seasoned apple slices is my kind of love language!!

If you’ve been with me a while, you know I think recipes are wonderful for general ideas, and blending 2 or 3 recipes together is even better!!  I’m not one to measure or even remember everything that goes into any one recipe.  Which can be to my detriment, because if my family likes a dinner I made, I rarely know how to make it again, in it’s exactness. True story.

I made this pie twice already this season, and the second one turned out incredibly better than the first.  So, I wracked my brain thinking of what I did differently, and came up with a few variations.  I used gala apples both times, but the second time, I didn’t peel them, because I forgot, plus the apples were refrigerated, not at room temperature. And I switched up the spices a bit. I guess all of these things can make a difference.  

So, for best results, put apples in the fridge and absolutely NO PEELING!!!

Ingredients
  1. 1 pie crust (9 in)
  2. 4-6 apples (depending on size) (thinly sliced and unpeeled)
  3. 2/3 c. brown sugar (packed)
  4. 2 Tbs. flour
  5. 1 tsp. cinnamon
  6. 1/2 tsp. cloves
CRUMB TOPPING
  1. 1/3 c. butter (softened, not melted)
  2. 3/4 c. flour
  3. 1/2 c. brown sugar (packed)
Instructions
  1. Preheat oven to 400°
  2. Combine apples and other ingredients in a large bowl. Mix thoroughly. Gently place your pie crust into your pie plate. Pour apple mixture into the crust. Spread evenly.
  3. Combine ingredients for crumb topping in small bowl. Use a fork to create the crumb mixture. Taste a slice of seasoned apple for a well deserved snack. Use your hand to generously sprinkle crumb mixture evenly on top of apples.
  4. Place your beautiful pie into the oven. Bake for 60-70 min. About 30-40 min in, cover pie loosely with foil, so the crumbs won't burn. Enjoy a cup of coffee and inhale deeply. Your kitchen should be smelling fantastic by now!! If at the end of the baking time the crumbs aren't brown enough, just take the foil off and bake for a few min more.

Step 3: Crumb Topping

apple crumb pie Make sure your butter is softened, not melted.  Best way to do this is to start with the butter in a bowl.  Put in microwave for 5 second intervals.  Try to smash the butter with a fork each time. When you can do so with ease, it’s softened.  Add the brown sugar and flour. Cut into it with a fork until you get the crumbly mixture you want.  Generously sprinkle evenly on top of apples.

Step 4: Bake

apple crumb pie 3Don’t forget to place foil loosely on top, about halfway in, to prevent burnt crumbs!!

*Pour yourself a cup of coffee and enjoy the aromatic love in your kitchen!!!

Step 5: Let it cool

Serve up a slice with some vanilla bean ice cream and, you too, can enjoy apple crumb pie for breakfast, lunch, dinner, and snack for the next day or so!!
