With three daughters, I’m completely lost when it comes to boys and their toys, but I do know there probably isn’t a boy out there who wouldn’t love a four-wheeler. My nephews have a bubblegum pink (yes, pink) four-wheeler — and they love it! When I was out to visit them last year, they took me for a ride. It was scary putting my life into the hands of a seven and nine year old, but I have to admit, I had a blast! This breakfast is for everyone out there with a sense of adventure (regardless the age).

One thing I absolutely adore about spring/summer is all the fresh fruit that’s readily available! Not sure about your kids, but my girls are big time fruit eaters. And coincidentally, they love pancakes as well. For any meal. Do you sometimes have breakfast for dinner? It’s a family fave in my home. With pancakes and fresh fruit involved, whooo‘s not going to love this big eyed owl?

Kids love animals, and it amazes me how all three of my girls have chosen different animals as their favorites. My eldest has always loved elephants; she even collects them (no, not the real ones!). I just found out my middle daughter has chosen giraffes as her new favorite — I’m pretty partial to them as well. At the age of three, my youngest set her heart on being a vet. Now she’s almost six, and she loves every domestic animal equally. Turtles just so happen to be one of her domestic loves — so I decided to turn her healthy whole-wheat waffle into a fun domestic turtle, complete with clementine butterflies!

Snow. I wish it would here in the Carolinas! There are so many fun activities to do in the snow, from snowball fights to catching snowflakes on your tongue, and if you’re lucky, you’ll have enough snow for snow tubing! I loved tubing when I was younger. Bringing a bit of winter fun to the breakfast table sparked some conversations about my childhood memories. I wish we lived in a colder climate so my children could experience the thrills of a winter wonderland. Maybe we will one day, but until then, we’ll have to live vicariously through our little banana friend.

It’s the New Year and I’m sure many of you have resolved to eat more healthy! Most of the time my girls eat balanced meals, but on those rushed mornings, I’m so glad that there are healthy options in the convenience of a frozen whole wheat waffle!! We — as in, “we the people” — wouldn’t even be celebrating Thanksgiving if it weren’t for the Wampanoag Indians, who, 400 years ago, were kind enough to show the Pilgrims how to plant corn, wheat, and other crops. Every Thanksgiving our family always finds something to be thankful for. Right now, I’m thankful that my middle daughter’s foot isn’t broken (she has to stay off of it, but it isn’t broken!). Since she’s home from school, I had more time to fix her breakfast this morning. Her request for a bagel with cream cheese turned into a Thanksgiving history lesson about Indians.
