When days get hectic and I really don’t feel like cooking,
I usually grab stuff to make grilled cheese or instant mac n cheese .
* GASP *
I know…it’s shocking isn’t it?!?
I do however have a couple of easy peasy meals up my sleeve that I can whip up.
I would like to share just one of my easy, simple, and yummy dinners with you.
Most importantly: MY GIRLS LOVE THIS!!!
BBQ CHICKEN QUESADILLA

~ Swanson Chicken ~ Black Beans ~ Cheese ~ Tortillas ~ Cantaloupe ~ Ranch ~
Swanson was kind enough to send me a can of their new, bigger can of chicken!!
I always have canned chicken on hand for a quick add in for pasta, rice, you name it.

An Ibex is a wild mountain goat with really big horns! Serve this yummy quesadilla in the shape of an Ibex head!

Treasure Map Quesadilla

~ Tortilla ~ Cheese ~ Bell Peppers ~ Olives ~ Pretzel Stick
Your little pirate will love to eat this easy quesadilla!
Trim tortilla into a rectangle (use scissors – so easy!) and sprinkle with grated cheese.
Make an X out of red pepper or tomato (or whatever colorful addition you choose).
Cut palm leaves out of pieces of green pepper and use a pretzel stick for the tree trunk.
Make “footsteps” with little bits of olive.
Add whatever other map details you can think of.

Heat up in microwave, toaster oven, oven, or on hot skillet until cheese melts.
Arrrgh, there be a delicious snack!

~ Tortilla ~ Cheese ~ Black Beans ~ Sour Cream ~ Olive ~
Preheat the oven to 350 degrees. Take a large tortilla and using a pizza cutter cut out the shape of the bat. Sprinkle cheese on top of the cut out shape, covering the whole shape. Next, use black beans and cover the cheese. Place onto a baking sheet and place in oven for 10 min or until heated through or as crispy as you want it. *note* The beans and cheese will run over the edges, just cut those away from the shape before using a spatula to get the bat off the sheet. Place him on a plate and let cool a bit. When it’s cool enough for your child, add sour cream (or ranch) for the base of the eyes. Cut an olive in half for the eyes.
Isn’t he just spooktacular?!?

What do you think of when you hear the word quesadilla? Cheese? Chicken? Let’s try something different.

PB & MARSHMALLOW QUESADILLA

Heat up a non-stick skillet to medium. Take a tortilla, spread peanut butter on it and place it in the hot skillet, peanut butter side up. Place marshmallows evenly on half of the tortilla. Fold other end over the marshmallows and cook until marshmallows are melted or until tortilla is brown. Flip and cook for another min or until brown. Place on a plate and let it cool. Cut PB&M Quesadilla into 4 pieces and place an apple wedge on top or each piece for presentation. Who doesn’t love apples and peanut butter anyway?
