Rainy-Day Kids Snack: April Showers

It’s been raining the last few days here, which is what inspired this fun kids snack (or even lunch). Being cooped up inside, I thought I’d get creative with goldfish flowers, string-cheese clouds and sunflower-seed raindrops (it was either that or play yet another round of Candy Land!). The results brightened up an otherwise gloomy afternoon, and as I reminded my girls, let’s not wish the rain away because, after all, April showers bring May flowers!

Springy Kids Lunch: Chickadee Quesadilla

Ah, spring has finally sprung — the bunnies are hopping, the daffodils are blooming, and the stores are wall-to-wall with Easter candy. You may have trouble convincing you kids that there aren’t just three major food groups this time of year (chocolate, jelly beans and Peeps), but here’s a fun way to get their noses out of their Easter baskets — an adorable (and cheesy, but in a good way) chickadee quesadilla served peeping hot.

Thanksgiving for Kids: Pilgrim Hat Quesadilla

You know those pilgrim hats we always associate with Thanksgiving, the ones with the big buckles? Well, it turns out that it wasn’t until later in the 1600s that those became fashionable attire in the New World. The pilgrims that came over on the Mayflower most likely wore floppier (and less dramatic) hats. Nevertheless, the big-buckled hats have become as much an icon at Thanksgiving as turkeys — and besides, what kid wants a floppy hat quesadilla!?

BBQ CHICKEN QUESADILLA & SWANSON GIVEAWAY

When days get hectic and I really don’t feel like cooking,
I usually grab stuff to make grilled cheese or instant mac n cheese .

An Ibex is a wild mountain goat with really big horns! Serve this yummy quesadilla in the shape of an Ibex head!

Pirate Party Food: Treasure Map Quesadilla

X marks the spot for this yummy treasure map!

Treasure Map Quesadilla

~ Tortilla ~ Cheese ~ Bell Peppers ~ Olives ~ Pretzel Stick

Your little pirate will love to eat this easy quesadilla!

Trim tortilla into a rectangle (use scissors – so easy!) and sprinkle with grated cheese.

Make an X out of red pepper or tomato (or whatever colorful addition you choose).

Cut palm leaves out of pieces of green pepper and use a pretzel stick for the tree trunk.

Make “footsteps” with little bits of olive.

Add whatever other map details you can think of.

Heat up in microwave, toaster oven, oven, or on hot skillet until cheese melts.

Arrrgh, there be a delicious snack!
