It’s been raining the last few days here, which is what inspired this fun kids snack (or even lunch). Being cooped up inside, I thought I’d get creative with goldfish flowers, string-cheese clouds and sunflower-seed raindrops (it was either that or play yet another round of Candy Land!). The results brightened up an otherwise gloomy afternoon, and as I reminded my girls, let’s not wish the rain away because, after all, April showers bring May flowers!

Ah, spring has finally sprung — the bunnies are hopping, the daffodils are blooming, and the stores are wall-to-wall with Easter candy. You may have trouble convincing you kids that there aren’t just three major food groups this time of year (chocolate, jelly beans and Peeps), but here’s a fun way to get their noses out of their Easter baskets — an adorable (and cheesy, but in a good way) chickadee quesadilla served peeping hot.

Thanksgiving for Kids: Pilgrim Hat Quesadilla

You know those pilgrim hats we always associate with Thanksgiving, the ones with the big buckles? Well, it turns out that it wasn’t until later in the 1600s that those became fashionable attire in the New World. The pilgrims that came over on the Mayflower most likely wore floppier (and less dramatic) hats. Nevertheless, the big-buckled hats have become as much an icon at Thanksgiving as turkeys — and besides, what kid wants a floppy hat quesadilla!?

When days get hectic and I really don’t feel like cooking,
I usually grab stuff to make grilled cheese or instant mac n cheese .
* GASP *
I know…it’s shocking isn’t it?!?
I do however have a couple of easy peasy meals up my sleeve that I can whip up.
I would like to share just one of my easy, simple, and yummy dinners with you.

Most importantly: MY GIRLS LOVE THIS!!!

BBQ CHICKEN QUESADILLA

~ Swanson Chicken ~ Black Beans ~ Cheese ~ Tortillas ~ Cantaloupe ~ Ranch ~

Swanson was kind enough to send me a can of their new, bigger can of chicken!!
I always have canned chicken on hand for a quick add in for pasta, rice, you name it.
Swanson not only sent me a coupon for $10 to buy the ingredients for this meal,

BBQ Chicken Quesadilla
Open Swanson’s canned White Meat Chicken and drain. Pour into a mixing bowl. Shred chicken with a fork. Add 1 cup of BBQ sauce {or more depending on how you like it.} Mix well. Place tortilla into hot pan. Spoon about 3 tablespoons of chicken mixture onto half of the tortilla. Spoon 2 tablespoons of black beans on top of chicken mixture. Sprinkle a handful of cheese on top of the beans. Fold flour tortilla in half. Brown on both sides or until cheese is melted.

Don’t forget the ranch for dipping!!
You could also make bbq ranch by adding bbq sauce to the ranch!!

Serve with salad, fruit, and/or veggies.

The possibilities are endless!!

This armored animal is the cousin of an anteater.

I have been learning so much on our alphabetical journey through unusual animals. I have never heard of a pangolin before this. Isn’t he cool? His armor is so neat!

PANGOLIN NUMMIE

Cut a pangolin shape out of a tortilla with scissors. Spread the tortilla with peanut butter (not too thin or the spikes won’t stick!) and add a raisin eye. Stick the frosted flakes (or other flaky cereal) into the peanut butter starting from the tail and moving up the animal, overlapping on each row.

INTERESTING FACTS:

Pangolins roll up into a ball when attacked.
“Pangolin” is a Malaysian word for “rolling up into a ball.”
The scales are made of keratin, the same material your fingernails are made of!
They can spray a stinky smell, kind of like a skunk.
They don’t have teeth, but use their claws to tear up their prey (ants or termites) and eat them with a long tongue.

Baby pangolins’ scales are still soft when they are born.

Alphabet Snack: “I” is for Ibex

An Ibex is a wild mountain goat with really big horns! Serve this yummy quesadilla in the shape of an Ibex head!

~ Tortilla ~ Cheese ~ Olives ~

IBEX-IDILLA

Put cheese on tortilla and fold in half. Microwave 30 seconds. Fold tortilla over again (so it’s in quarters).

Cut horns using a bowl as a template. Place bowl over tortilla and cut around it.

Cut remaining tortilla as shown below. Arrange on plate.

Place olive pieces for eyes, nose, and mouth.

About the Ibex:
A male ibex’s horns may reach three feet long!
Ibex is an herbivore (only eats vegetation).
Older males grow beards.

Pirate Party Food: Treasure Map Quesadilla

Treasure Map Quesadilla

~ Tortilla ~ Cheese ~ Bell Peppers ~ Olives ~ Pretzel Stick

Your little pirate will love to eat this easy quesadilla!

Trim tortilla into a rectangle (use scissors – so easy!) and sprinkle with grated cheese.

Make an X out of red pepper or tomato (or whatever colorful addition you choose).

Cut palm leaves out of pieces of green pepper and use a pretzel stick for the tree trunk.

Make “footsteps” with little bits of olive.

Add whatever other map details you can think of.

Heat up in microwave, toaster oven, oven, or on hot skillet until cheese melts.

Arrrgh, there be a delicious snack!
