The end of school is just around the corner, and you know what that means: summer camp! And what’s one thing you think of when you think of summer camp (other than campfire songs, s’mores, and mosquitoes)? Canoes! It just seems a particular right of passage that kids should don life jackets and set out in a mini-armada of canoes so they can … what? I don’t know. But I remember how much fun it was to be out on the open water, and peaceful, too. When you combine the fun of canoeing with another summertime staple — grilling — you get the kind of fun meal that’ll inspire all sorts of camp stories!

Picture-Perfect Kids Lunch: Little House on Snow Pea Lane

I have quite a collection of pictures my kids have drawn for me. Most of them include stick figures of our family, little blobs of color to represent our pets, and then, of course, there are innumerable pictures of our home, which inspired this lunch. I guess there’s a certain appeal for kids to want to draw straight lines, windows, grass and a smiling sun — over and over and over again.

Simple Kids Lunch: May Flowers

April, and it’s showers, is over, so bring on the May flowers!! It might be raining where you are, but it’s 90 degrees with 1000% humidity here in NC. Have I mentioned how much I loathe summers in the south?? Well, I do. It’s May and it already feels like summer. One good thing about May would be the flowers that are starting to bloom. My girls have spent hours picking honeysuckles in our backyard. It’s become quite the neighborhood kid event. They are going to have to find something else to do soon because I don’t think there are many suckles left!! Here are a few flower sandwiches from the past that I wanted to bring back.

Healthy Kids Snack: Mini {shish} Kabobs

Summer is around the corner and with it comes fresh fruit!!

Who doesn’t love fruit?

Who doesn’t love kabobs?

Who doesn’t love fruit kabobs?

Well, add a dash of salty to that mix and you have a winner!!
Not sure on the etiquette for adding a shish to kabob.
But who doesn’t love the shish in a kabob?

MINI {shish} KABOBS

~ Crackers ~ Strawberry Cream Cheese ~ Pretzel Sticks ~
~ Fruit ~ Mini Marshmallows ~

Aren’t they just the shishiest kabobs ever?!?

To make Mini {shish} Kabobs:
Wash all of your fruit first.
Cut the grapes, melon, strawberries and banana into small pieces for skewering.
Use a toothpick to poke a hole into the fruit pieces to help the pretzel go through easier.
Skewer your fruit pieces, raspberries, blueberries and marshmallows onto pretzel sticks.
{Create fun patterns and mix up the colors.}
Set them aside.
Spread 1tsp of strawberry cream cheese onto 1 TownHouse Original Cracker.
Place your fruit kabob on top of cream cheese.
Repeat until desired amount is made.
Arrange on a plate and serve.

Fun to assemble and more importantly, fun to eat!!

Whimsical Sweets: Marshmallow Raspberry Toadstools

Everyone loves a little bit of whimsy every now and again!!
If I had my way, everyday would be whimsical!!
Simplicity at it’s finest!!

TOADSTOOL WHIMSY

~ Raspberries ~ Mini Marshmallows ~ Coconut ~

It took me less than 5 min to make this yummy delightful snack!!
My girls LOVED these!!!

To make Toadstool Whimsy:
Wash and dry fresh raspberries. Put about 1/4 cup of coconut in a zip lock bag. Squeeze a few drops of green food coloring in the bag and seal. Let the kids mix and shake the bag around until the coconut is the desired color. Pour the coconut onto a plate. Stick mini marshmallows inside the raspberries to make the toadstools. Arrange on plate and enjoy!!

This snack can also be a frozen treat!!
Just put it in the freezer for a few min until chilled.
YUMALISH!!!

Kids Breakfast: Oscar the Oyster Pancake

~ Banana Pankcakes ~ Banana ~ Chocolate Chips ~

I don’t know why he resembles Cookie Monster…strange.

TO MAKE OSCAR THE OYSTER:

Use whichever pancake recipe you usually use.
Mash a banana and mix into batter.
Make small banana pancakes.
Place a small banana pancake onto plate.
Create the banana pearl by using a melon baller.
Place banana pearl in middle of bottom pancake.
Place another banana pancake on top of banana pearl.
Slice a chunk of banana and then cut in half for eyes.
Place on top of banana pancake.
Use chocolate chips for his eyes.
Drizzle syrup on plate surrounding the clam for the water.

{I put syrup on the plate for “water” but it made the pic really dark.}

It’s just downright clamtastic!!!

Kids Lunch: Williamston the Whale Sandwich

This PB&J whale will delight the littles!!

{My hubby even got in on this one and named him!!}

~ Sandwich ~ Blueberries ~ Miniature Marshmallow ~ Chocolate Chip ~ Raisin ~

Yeah, I couldn’t think of anything for his blow hole.
Actually, I didn’t have anything else blue in the house other than blueberries.

To make Williamston:

I made a peanut butter and jelly sandwich, but you can make whatever.
Cut sandwich to look like a whale.
Cut the mini marshmallow in half.
Stick a chocolate chip into a marshmallow half.
Press into sandwich for the eye.
Cut a piece of raisin for the mouth.
Arrange fresh washed blueberries on plate for water.

Kids will have one whale of a time with this!!!

Kids Summer Breakfast: Bob the Banana

To celebrate Summer,
I’m dedicating the month of June to all things beachy and nautical!!

BEACH MONTH

Let’s start with Bob The Banana in an inner tube and floaties!!

BOB THE BANANA

~ Banana ~ Fruit Loops ~ Bagel ~ Grape ~ Pretzel Sticks ~

Breakfast just got a whole lot cuter!!!

TO MAKE BOB BANANA
Cut a banana in half.
Stick pointed end in a mini bagel and place on plate.
Put 3 fruit loops on pretzel stick for the floaties.
Repeat.
Stick arms with floaties into the banana.
Half of a fruit loop for his smile.
Slices of grape for his sunglasses.

Better eat him in a hurry or he’ll float away!!

Kids Summer Lunch: Wildflour Sandwich

Maybe that’s why I’m on a flower kick!!

A fun crafty lunch your kids can make!

I guess this is for all the little meat lovers out there!!

WILDFLOUR

~ Bread ~ Salami ~ Cheddar Cheese ~ Turkey ~ String Cheese ~ Sugar Snap ~

With just a hint of a veggie, what’s not to love?!?

CLICK BELOW FOR MORE INFO:
Spread mayo on a piece of bread.
Use a cup to cut a large circle out of the bread.
Place a piece of salami on top of bread.
Use a circle cookie cutter to cut the cheddar cheese.
Place on top of salami.
Use a smaller circle {vitamin bottle} to cut out 2 pieces of turkey.
Place on top cheddar cheese.
Cut a piece of string cheese for the center.
Stick a sugar snap onto a skewer.
Skewer the sandwich onto the skewer.

Stick the flower into a small painted terracotta pot filled with rice.
{You can use floral foam as well.}
I put black rocks on top to make it look nice.
You can use whatever you wish.

I just LOVE wildflowers!!!

Mother’s Day Flower: Flower Sandwich

Need something fun and different for Mother’s Day?
Here’s a simple, yet wonderfully creative flower you can make and present to you mom for lunch!!

Plus it’s a lunch your mother would approve of!!

A FLOWER FOR YOU

~ Bread ~ Hummus ~ Spinach Leaves ~ Swiss Cheese ~ Pecan ~

My kids love this, but most kids may not be so inclined.
Hence, it’s for the moms out there!!

Spread hummus on a piece of bread.
Use a cup to cut a large circle out of the bread.
Arrange clean spinach leaves on top of the hummus.
Use a smaller circle {vitamin bottle} to cut out a piece of swiss cheese.
Place cheese in the middle of the spinach.
Skewer the sandwich onto a skewer.
Put a dab of hummus on a pecan.
Press it on the cheese to hide the skewer.

Stick the flower into a small painted terracotta pot filled with rice.
I put black rocks on top to make it look nice.
You can use whatever you wish.

I actually made this one for myself the day I made the PB&J ones for my girls.
It was so delish and super fun to have a Nummie just for me!!!
