Fun Kids Lunch: Bunny Tushy

It’s the Easter season and bunnies are hoppin around in my brain. The bunny tushy has been hoppin around pinterest for the last few weeks. There are adorable tushy cookies, cupcakes, sweet Easter cakes and I even saw bunny tushy pancakes!! I had to get in on the craze and create a fun bunny tushy lunch!!

Bunny Tushy Sandwich

~ Sandwich ~ Crackers ~Celery ~ Carrots ~ Cheese ~

Hoppin on your plate and into your belly!!

To make Bunny Tushy:

1. Use a cup to cut out circles out of bread.
2. Make any sandwich you would like with the bread circles.
3. Slice up celery for the grass.
4. Slice baby carrots for the flowers.
5. Use a vitamin bottle to cut a circle out of white cheese for the tail.
6. Use a lid from a sprinkles bottle to cut out circles of white cheese for the paw pads.
7. Use a straw to cut out small circles of white cheese for the toes.
{Use a dried spaghetti noodle in the straw to get the cheese circles out.}
8. Arrange on plate and enjoy!!

Springy Kids Lunch: Chickadee Quesadilla

Ah, spring has finally sprung — the bunnies are hopping, the daffodils are blooming, and the stores are wall-to-wall with Easter candy. You may have trouble convincing you kids that there aren’t just three major food groups this time of year (chocolate, jelly beans and Peeps), but here’s a fun way to get their noses out of their Easter baskets — an adorable (and cheesy, but in a good way) chickadee quesadilla served peeping hot.

I’ve got bunnies on the brain — must be because Easter is right around the corner! This simple yet festive dinner was brought to you by leftovers. I know, I know—kids hate leftovers, right? But when you present them in an irresistible way, what’s not to love? My girls got their own bunny dinner last night, and their squeals of joy brought a smile to my face! Take that leftovers!

The Lorax Snack

Dr. Suess is a creative genius. What an imagination!! With his birthday this month and his new movie, The Lorax in theaters, I knew I had to whip up some Dr. Suess fun!! I haven’t made it to the theaters yet, much to the dismay of my three girls. They want to see The Lorax soooo badly {and I do too}!! Until we can get it together to go to the movies, this adorably fun snack/lunch will keep their appetites entertained!!

~ Bread ~ Cheese ~ String Cheese ~ Cucumbers ~ Mandarin Oranges ~

To make The Lorax:

1. Cut the bread into an oval for the body.
2. Cut an oval out of a slice of cheddar/orange cheese and place on top of bread.
3. Cut the mustache and eyebrow shapes out of a slice of mozzarell/white cheese.
4. Use a large straw to cut out the eyes out of white cheese.
5. 2 black sprinkles/chocolate chips are used for the pupils.
6. Cut arms and legs out of the cheddar cheese.
7. Arrange mandarin oranges and cucumbers on the plate for the tops of the trees.
8. Cut the string cheese in half and place flat side up for the tree trunks.
9. Cut pieces of crust for the stripes on the tree trunks.
Arrange and enjoy!!!

Ok, so in the children’s song, it’s Mary’s little lamb that follows her to school, but it’s unlikely that this little fella would make it all in one piece in the lunchbox. No matter … if your kids are like mine, they come home from school absolutely famished! One day they each came home to their own “little lamb” waiting for them, and boy did they love it!

Healthy Kids Breakfast: Waffle Sundae

It’s the New Year and I’m sure many of you have resolved to eat more healthy! Most of the time my girls eat balanced meals, but on those rushed mornings, I’m so glad that there are healthy options in the convenience of a frozen whole wheat waffle!! Delight your kids with a fun spin on the old classic ice cream sundae for breakfast!!

WAFFLE SUNDAE

~ Waffle ~ Banana ~ Craisins ~

Set out chocolate chips, nuts, whip cream, and other fun goodies and let the kids make their own!!

To make Waffle Sundae:

Place the waffle into toaster at lightest setting. Two toastings may be required to heat completely. Cut the waffle almost in half. Place the larger piece on plate for the bowl. Cut a small strip of the remainder piece of waffle for the decoration at the top of the ice cream. Arrange the sliced banana on plate as the ice cream. Take the rest of the waffle and tear it into little pieces. Roll the pieces into balls and place in banana gaps. Bunch 4 craisins together for the cherry and put in place. Cut 1 craisin in half and make the stem.

Kids Fall Lunch: Falling Leaves Sandwich

It’s officially FALL!!!!!

I’m so excited, because it’s my fave season!!!
{Even though it’s still 85° where I live, which is totally wrong.}

The leaves have yet to change colors, but I couldn’t help myself in making a fun fall Nummie!!

The trees always show the first signs of fall.
Oh, how I adore all the pretty leaves changing color.

I wanted to come up with a new creative way to make colored leaves. While brain storming, my 7yo dropped her cute little pumpkin on the living room floor. It’s not even Oct and my kids are already smashing pumpkins!! Let nothing go to waste…ROAST THE SEEDS!!! I was elbow deep into the slimy pumpkin digging out the precious little seeds when it hit me: DYE THE PUMPKIN SEEDS. So, that’s what I did! Added a bit of food coloring to them, and voila!!
We have pretty leaves!!!
They are so festive…not to mention yummy!!

PUMPKIN SEEDS:
Once you have dug them out of the pumpkin and rinsed them of any pulp, toss them with a drizzle of olive oil, a dash of balsamic vinegar, and sea salt. Divvy them up into separate containers. One for each color you wish to use. I made red, orange, yellow, and left one handful natural. Put them all in a single layer on a baking sheet. Bake 325° for about 20 min or until desired crispiness. Let cool. Store in dry place.

TREE:
Use a cup to cut out a circle from a slice of bread.
Use same cup to cut out a circle from a slice of cheese.
Put cheese on top of bread and place on plate.
Cut a tree trunk out of another slice of bread. Put in place on plate.
Arrange your colored pumpkin seeds for the leaves on tree, falling, and at the base of the tree.

More fall inspired Nummies are on the way!!! YAY!!!
