The end of school is just around the corner, and you know what that means: summer camp! And what’s one thing you think of when you think of summer camp (other than campfire songs, s’mores, and mosquitoes)? Canoes! It just seems a particular right of passage that kids should don life jackets and set out in a mini-armada of canoes so they can … what? I don’t know. But I remember how much fun it was to be out on the open water, and peaceful, too. When you combine the fun of canoeing with another summertime staple — grilling — you get the kind of fun meal that’ll inspire all sorts of camp stories!

I have quite a collection of pictures my kids have drawn for me. Most of them include stick figures of our family, little blobs of color to represent our pets, and then, of course, there are innumerable pictures of our home, which inspired this lunch. I guess there’s a certain appeal for kids to want to draw straight lines, windows, grass and a smiling sun — over and over and over again.

April, and it’s showers, is over, so bring on the May flowers!! It might be raining where you are, but it’s 90 degrees with 1000% humidity here in NC. Have I mentioned how much I loathe summers in the south?? Well, I do. It’s May and it already feels like summer. One good thing about May would be the flowers that are starting to bloom. My girls have spent hours picking honeysuckles in our backyard. It’s become quite the neighborhood kid event. They are going to have to find something else to do soon because I don’t think there are many suckles left!! Here are a few flower sandwiches from the past that I wanted to bring back.

Simple Kids Lunch: Sleepy Kitty

We have a kitty who just turned one. She’s so full of energy and sleeps just as hard as she plays. I love to watch her sleep. She sleeps on her back with her belly exposed a lot of the time. Our old tom cat NEVER slept like that. I guess he felt vulnerable and slept curled up and protective of himself. He got into a lot of fights and definitely wasn’t our favorite cat. Anywho. A sleepy kitty is usually a cuddly kitty, which is my favorite!!! Here’s a sleepy kitty you can make on a lazy day for your kidos.

~ Sandwich ~ Cheese ~ Lunch Meat ~ Frozen Pea ~

I may or may not have sang “Soft Kitty” whilst creating this sleepy kitty.
If you don’t watch Big Bang Theory, or know what I’m talking about,
Here you go:

To make Sleepy Kitty:
1. Cut the corners off of your bread.
2. Make any sandwich you would like.
3. Use a small cookie cutter, or a sprinkles lid, and cut 2 circles out of white cheese for the eyes.
4. Use the same device to cut out the nose out of orange cheese.
5. Using the same device, cut out a circle of lunch meat and then in half again for the eyelids.
6. Cut strips of cheese for the whiskers.
7. Use a scrap piece of crust/lunch meat for the line under his nose.
8. Fold the corner pieces together to get they to curve a bit for the ears.
9. Gently dry off a frozen pea in a paper towel and then cut in half.
10. Pull the pea pod halves out of the skin and use for eyes.
11. Arrange and enjoy.

Revved-Up Kids Breakfast: Four-Wheeler Pancake

With three daughters, I’m completely lost when it comes to boys and their toys, but I do know there probably isn’t a boy out there who wouldn’t love a four-wheeler. My nephews have a bubblegum pink (yes, pink) four-wheeler — and they love it! When I was out to visit them last year, they took me for a ride. It was scary putting my life into the hands of a seven and nine year old, but I have to admit, I had a blast! This breakfast is for everyone out there with a sense of adventure (regardless the age).

Fun Kids Breakfast: Owl Pancake

One thing I absolutely adore about spring/summer is all the fresh fruit that’s readily available! Not sure about your kids, but my girls are big time fruit eaters. And coincidentally, they love pancakes as well. For any meal. Do you sometimes have breakfast for dinner? It’s a family fave in my home. With pancakes and fresh fruit involved, whooo‘s not going to love this big eyed owl?

Fun Kids Breakfast: Owl Pancake

~ Pancakes ~ Strawberries ~ Kiwi ~ Grapes ~

To Make Owl Pancakes:

1. Whip up your favorite pancake batter.
2. Gently pour about 5 tablespoons of batter into a hot skillet in the shape of a circle.
3. When the batter is bubbly, flip it over.
4. Brown evenly and pull out of skillet.
5. Gently pour about 3 tablespoons of batter into a hot skillet in the shape of a circle.
6. Repeat steps 3 and 4.
7. Arrange on plate as shown.
8. Peel and slice kiwi and use for the eyes.
9. Slice strawberries for the feathers, beak, and wings.
10. Slice grapes for the toes and feathers on the side of his head.

Rainy-Day Kids Snack: April Showers

It’s been raining the last few days here, which is what inspired this fun kids snack (or even lunch). Being cooped up inside, I thought I’d get creative with goldfish flowers, string-cheese clouds and sunflower-seed raindrops (it was either that or play yet another round of Candy Land!). The results brightened up an otherwise gloomy afternoon, and as I reminded my girls, let’s not wish the rain away because, after all, April showers bring May flowers!
